FISH FRY TRADITION
In the summer of 1988, the Schneider’s held their first fish fry at Rolling Knolls Golf Club. From the beginning, Chef Dainis Tiliks prepared the freshly beer battered perch and haddock, the homemade coleslaw, and the breadsticks and cheese….they were a big hit. Shortly after, we expanded the menu to include more fish varieties.
As it became a family tradition we also added our signature hamburgers, chicken strips sandwiches, and our delicious Prime Rib. To many of our patrons, Rolling Knolls became better known for its Friday night fish fry, often serving over 400 dinners on a Friday night. Our fish fry became a place where everyone came together to enjoy great food with friends and family.
With the sale of Rolling Knolls in 2010, the same recipes and quality food conceived in 1988 were brought to the Golf Club of Illinois…. continuing the Schneider’s Friday night fish fry tradition.
